Sweet-and-smoky cedar-plank salmon
Calling all pescatarians: this delicious salmon dish will fulfill all of your fancy-yet-healthy dinner needs. This meal is relatively low-stress, but will have guests asking where you acquired your culinary chops.
You’ll need 2 tbsp of light brown sugar, 2 tsp of smoked paprika, 1 tsp of grated lemon zest, a pinch of Kosher salt and ground black pepper, and a 2 ½ pound salmon fillet.
To get started, soak your cedar grilling plank in water for at least an hour – better if longer. Then heat your grill to medium. While it heats, combine your sugar, paprika, lemon zest, and salt and pepper. Then, put your salmon on the soaked plank and grill for twenty-five to thirty minutes. Yes, it’s that easy!
Bulgur & cashew stuffed eggplant
If you want a completely vegan dish, this is the one for you. This eggplant meal has it all: crunch, sweetness, and an extra kick of spice. It’s also surprisingly easy to make, but is sure to wow your guests! For this recipe, you’ll need 1 tbsp of olive oil, 3 cloves of garlic, ½ a cup of golden raisins, ½ tsp of curry powder, ¼ tsp of salt, 1 cup of quick-cooking bulgur, 2 cups of water, 2 eggplants, ½ a cup of cashews, and chopped mint.
To start, you’ll want to heat your olive oil in a small saucepan. Then, slowly add your crushed garlic, golden raisins, curry powder, and salt, and stir for two minutes. Then, add bulgur and water until the pot starts to simmer. Once it is simmering, cover and continue cooking for fifteen minutes.
While it’s simmering, halve the eggplants, scoop out seeds, and coat with olive oil and salt. Broil them for around seven minutes – and make sure they’re tender when you take them out! Once the eggplants are done, cover them with foil, and stir the simmering bulgur while you stir in cashews. Finally, stuff the eggplants with the mixture and chopped mint and you have yourself a great meal.
Carrot and black bean crispy tacos
This one is a nice and refreshing fan favorite. For this dish, you’ll need 3 tbsp of extra-virgin olive oil, 1 small chopped onion, 1 diced poblano pepper, 1 tsp of chili powder, 1 can of drained and rinsed black beans, 1 tbsp of lime juice, a pinch of Kosher salt and pepper, ½ lb of medium carrots, 1 tsp of ground cumin, 8 warmed whole-grain taco shells, sliced avocado, crumbled queso, and chopped cilantro and radishes.
To dive into making this dish, preheat your oven to 450 degrees Fahrenheit. Then, heat 1 ½ tablespoons of oil in a saucepan. Stir fry onion & pepper until tender, and then add chili powder, black beans, and ⅓ cup of water. Turn the heat down to low, and stir occasionally until the contents are thickened. Once this has happened, mash the beans with the back of the spoon.
While the contents are thickening, toss carrots with cumin and olive oil on a baking sheet. Then, season with salt & pepper, and proceed to roast in the oven for around ten minutes. Then, divide your beans & carrots between tacos, seasons with avocado, queso, cilantro, and radishes. The result will be one of the juiciest and refreshing meals you’ve had in a long time.
