Mix up your boring pulled pork dinner with these innovative recipes

Summer is just around the corner, meaning barbecues are going to be coming back in force. It also means you’ll need to clear out your fridge for all the leftover meat you’ll have to store. 

No other summertime barbecue classic will have you shoving your greens aside more than pulled pork. The delicious & savory sandwiches are amazing, but what do you do with the leftovers after the sun has set and the barbecue has cooled? 

Luckily, we have the answer for you. We squealed our way through the internet to find some recipes with pulled pork that’ll help you clear out the fridge and doctor up your leftovers like never before. Grab your tongs and let’s get cooking. 

Pulled Pork Shepherd’s Pie 

This first on our list of recipes with pulled pork takes two old classics and makes them new again. While it does take a while to prepare, this hearty dish will be worth the wait when it arrives at the dinner table. 

Ingredients 

  • 5-6 cups pulled pork
  • 2 cups bbq sauce
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3-4 pounds potatoes
  • 2 tbsp butter
  • 1/4 cup milk
  • 1 1/2 cups grated cheddar cheese

Instructions 

  1. Preheat the oven to 350F.
  2. Peel potatoes and, if they’re large, cut in half. Place in a pot and fill with water. Boil until tender. Drain the water. Add the butter & milk to the potatoes. Mash until the potatoes are creamy.
  3. Toss pulled pork with BBQ sauce until evenly coated. Spread on the bottom of a 13×9 baking dish (lasagna pan).
  4. Sprinkle frozen peas & corn on top of the pork.
  5. Spread the mashed potatoes on top of the frozen veggies.
  6. Top with the grated cheese.
  7. Bake in the oven for forty-five to sixty minutes. The cheese should be starting to brown and some bbq sauce should be bubbling up the sides.

BBQ Pulled Pork and Rice Skillet Supper

This next addition to our list of recipes with pulled pork is for those who need to get rid of the pig without eating like one. This lean skillet recipe is a perfect quick dinner that will satisfy like a good sandwich, no bread required. 

Ingredients 

  • 1 Tablespoon oil
  • 3/4 cup pepper, chopped
  • 1/2 cup onion, chopped
  • 2 teaspoon garlic powder
  • 1 cup rice
  • 2 cups water
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 can black beans, drained
  • 1 cup corn kernels (I used frozen)
  • 1 1/2 cups pulled pork
  • 3/4 cup BBQ sauce
  • 1/2 cup shredded cheddar cheese
  • green onions or cilantro for garnish

Instructions 

  1. Heat oil in a large skillet. Add onions, peppers, and garlic and cook until they start to soften. Season with salt and pepper
  2. Add the pulled pork and rice to the skillet, stirring until the rice is lightly toasted.
  3. Stir in the water, bring to a boil and then simmer for about twenty minutes. Add a little more water if necessary to keep it from drying out.
  4. Once rice is al dente, stir in black beans, corn, tomatoes, and BBQ sauce.
  5. Top with cheese and cook until cheese begins to melt.
  6. If you’d like (and you have an oven safe skillet), broil until the cheese is bubbly and starting to brown.
  7. Garnish as desired.

Pulled Pork Mac & Cheese

A guaranteed show stopper for the kids, this last addition to our list of recipes with pulled pork is a fast & hearty dish that both kids and adults will love. 

Ingredients 

  • 3 cups uncooked elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 cups milk
  • 8 ounces Velveeta cheese (cubed)
  • 1 1/3 cups cottage cheese
  • 2/3 cup sour cream
  • 2 cups shredded sharp cheddar cheese (divided)
  • 4 cups pulled pork
  • 1 1/4 cups barbecue sauce

Instructions 

  1. Preheat the oven to 350 degrees.
  2. Cook macaroni according to package directions. Drain the macaroni and place it in a greased 9×13 baking pan (or one slightly larger).
  3. In a medium saucepan, melt 4 tablespoons of butter. Add in the flour, salt, and sugar, then stir until smooth.
  4. Gradually add in the milk, stirring constantly. Bring to a boil; cook & stir for two minutes or until the mixture has thickened. Reduce the heat to low.
  5. Stir in the Velveeta cheese until melted.
  6. Stir in cottage cheese, sour cream, and 1 cup cheddar cheese until melted.
  7. Pour the cheese mixture over macaroni.
  8. In a medium bowl, mix together the pulled pork and barbecue sauce. Spoon the pulled pork evenly over the macaroni and cheese.
  9. Sprinkle with the remaining cheddar cheese.
  10. Bake, covered, for twenty minutes. Then uncover & bake an additional twenty minutes or until heated through.
  11. Sprinkle the top with french fried onions or freshly snipped parsley if desired.
