Enjoy the warm spring weather with these refreshing mimosa recipes

After this year, we think we all need a drink. With summer just around the corner, everyone seems to be gearing up for all the classic bashes, from barbecues to birthdays & brunches. Especially the brunches (albeit socially distanced brunches).  

And no brunch menu is complete without a nice, smooth mimosa. This simple little drink has allowed people to let their hair down as they munched on classic brunch favorites like quiches & waffles for quite a while (and considering this past year, we’ll need that now more than ever). As far as cocktails go, there is never a wrong time for a mimosa (really, never. It’s 5:00 somewhere, after all)

But some more adventurous people may want to spice up their mimosas a little. But how does one take such a simple recipe and change it into something new that still pairs well with these classic brunch favorites? Luckily, we poured through the internet and found some fresh mimosa recipes for you to try this summer. 

Grab a glass and let’s get mixing. 

Orange Creamsicle Mimosa 

This first addition to our list of mimosa recipes combines both the classic drink with another summer favorite, the orange creamsicle you would get from any ice cream truck or freezer section. 

This drink will bring you back to your childhood (though keep in mind, this is still not a kid friendly drink. Of course, you can make it kid-friendly by substituting the champagne with a non-alcoholic option like sparkling grape juice). 

Ingredients 

  • 2 cups chilled orange juice
  • 2 tablespoons chilled heavy cream
  • 2 teaspoons granulated sugar
  • 2 cups chilled champagne

Instructions 

  1. In a large pitcher, mix the orange juice, cream and sugar. 
  2. Stir the mix well to let the sugar dissolve.
  3. Pour it into glasses, dividing equally. 
  4. Top the glasses with champagne and serve immediately.

Hawaiian Mimosa 

This year hasn’t exactly been good for traveling. Heck, a lot of us might still not be able to see much of the world past our backyard this coming summer. But with this next addition to our mimosa recipes list, you can bring the flavors of the lovely Hawaiian islands right to you! 

Ingredients 

  • Coconut Rum
  • Pineapple Juice, cold
  • Champagne or Prosecco, cold
  • Pineapple slices and/or cherries for garnish

Instructions 

  1. Per mimosa: add one ounce coconut rum and two ounces pineapple juice to a champagne glass. Top with champagne and garnish with pineapple and/or cherry.
  2. To make a pitcher: add one cup coconut rum, two cups pineapple juice, and an entire 750mL bottle of champagne or prosecco to a pitcher. Add pineapple slices and/or cherries to the pitcher or glasses for garnish.

Strawberry Mimosa 

Summer is strawberry season, after all, the lovely red fruit already lining grocery store shelves.  Take advantage of these delicious fresh fruits with our last addition to our mimosa recipes list that pairs perfectly with any brunch treat!  

Ingredients 

  • 2 cups orange juice, fresh squeezed or store bought with pulp (chilled)
  • 1/2 cup fresh strawberries, with green tops removed
  • 1 25-ounce bottle champagne, chilled  

Instructions 

  1. Add orange juice & strawberries to the blender and blend until smooth.
  2. With a champagne flute tilted at a forty five degree angle, slowly fill the glass halfway with champagne.
  3. Top with orange-strawberry juice mixture. Garnish with strawberry & orange slices (optional). 
  4. To make a pitcher: Make juice in a blender and add to a large pitcher. Add fresh strawberry & orange slices and place in the fridge.
  5. When ready to serve, pour in chilled champagne and stir.
